1 (12 ounce) bag fresh cranberries
1 cup sugar

9 large russet potatoes, peeled and cut in half lengthwise
1/2 cup butter
1 cup milk
salt and ground black pepper to taste
Place the potatoes into a large pot, and cover with water. Bring to a boil, reduce heat to medium-low, cover, and simmer until tender, 20 to 25 minutes.
Drain, and return the potatoes to the pot. Mash the potatoes with a potato masher, then add the butter and milk. Continue to mash until smooth and fluffy.
Then add your salt and pepper.

Mix the wet ingredients and the dry ingredients in separate bowls, and then combine them. Add fresh cracked pepper and more salt to taste.
2. Pour into a greased baking dish. Top with small dabs of butter (about 2-3T).
3. Bake at 350 (180 C) for 50-55 minutes, or until golden brown and set in the middle (give it a shake – it shouldn’t jiggle too much in the middle when it’s ready)

Pumpkin Dinner Rolls;
They are just like the basic dinner rolls, they are more of a orange color because there is pumpkin in them!
I think they taste so much better if you make them a day before Thanksgiving.
Makes 2 dozen
1.1/2 cups warm water
2.1/4 teaspoons yeast
2 tablespoons sugar
1 tablespoon salt
1 egg
3/4 cup canned pumpkin
5 tablespoons butter
4 to 5 cups flour
Poppy seeds or sesame seeds [optional]
In a electric mixer cream the butter (take out of the bowl and set a side).
Then put the warm water and yeast just mix it a little bit then leave it to sit for like 3 min's, then put in the sugar and butter mix it until the the sugar has dissolved and the butter is in little lumps and looks like its melting.
Add the egg and the pumpkin, gradually add the flour then transfer on a floured surface and knead for at least 1 min, put the dough in a greased bowl and let it rise for an hour in room tem before. or peheat the oven on the lowest setting 170'. then before you put it in the oven. turn the oven off. it only takes the dough about 35 min's to rise (it saves a lot of time!)
When the dough has finished rising. Heat the oven at 385'
Put the dough on a floured surface and make roll shapes don't make then to big they get bigger when you cook them
set the rolls on a greased baking sheet and put them in the oven for 15+ min's. brush the tops with butter then put them in for 5 min's more
or until golden brown, let them cool. then put them in the refrigerator.
Pecan Pie;
The crust, I put cream cheese in it
1 cup flour
4oz's cream cheese
1/2 cup butter
and some water about 1/4 cup
In a electric mixer cream the butter and cream cheese then put in all the flour, scrape down the sides of the bowl then add the water.
The inside:
1/2 cup Maple syrup
1.1/2 cup Pecans [Hole or chopped it doesn't really matter to me]
3 eggs
1/2 cup melted butter
you could put a 1/2 cup sugar but i think the maple syrup is fine
1st melt the butter
Then in a med sized bowl add the eggs, maple syrup and butter, then add the pecans
Pumpkin Pie;
1.1/2 cups of pumpkin or a 15oz can of pumpkin
2 eggs
1 teaspoon cinnamon
2 teaspoon of allspice or pumpkin pie spice
1/2 cup sugar
Evaporated milk (12oz can), i used a cup of milk
In a small bowl add the sugar, cinnamon, allspice or pumpkin pie spice
in a larger bowl add eggs and pumpkin then add the sugar, cinnamon, allspice or pumpkin pie spice in the larger bowl mix it then add the milk, pour it in the crust.

1 can [13 oz's] of Coconut milk
16 oz's of Chocolate chips
1.1/2 teaspoons of Cocoa
1.1/2 tablespoons of butter
A pinch of salt
Walnuts & Pecans (optional)
Heat the Coconut milk, Chocolate chips, Cocoa & Salt in a medium pot until melted/smooth, then add the butter.
Pour in a 8x9 pan lined with wax paper then put in the fridge for 3 hours or so.
I put it in the freezer for 20+ min's before serving

My Sisters Birthday cake
2 cups boiling water
1 cup unsweetened cocoa powder
2.3/4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
2 1/4 cups white sugar
4 eggs
1 1/2 teaspoons vanilla extract
Directions:
Preheat oven to 350 degrees F (175 degrees C).
Grease 2 - 9 inch round cake pans.
In medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool.
Sift together flour, baking soda, baking powder and salt; set aside.
In a large bowl, cream butter and sugar together until light and fluffy.
Beat in eggs one at time, then stir in vanilla. Add the flour mixture alternately with the cocoa mixture.
Spread batter evenly between the 2 prepared pans.
Bake in preheated oven for 25 to 30 minutes. Allow to cool.
The Strawberry icing;
3/4 cup frozen strawberries, also some fresh strawberries for the middle and the top
1/3 cup sugar
1.1/2 [8oz block of cream cheese]
With your defrosted strawberries. Puree them in a food processor.
In a electric mixer, Mix the Cream Cheese & Sugar until smooth, Then add the pureed strawberries. Mix at high speed for 3 min's or until creamy.
Dog Cookies
2 Cups wheat flour
1 Cup rolled oats
2 Tablespoons molasses
1/4 cup peanut butter
1.1/4 cups of bolling water
Mix the flour and oats, then mix in the water, peanut butter and molasses
Heat oven at 300' and cook them until hard (at least 35 min's) Makes about 3 dozen

One 8oz pack of cream cheese
1/2 cup milk
1/4 sugar
1/2 cup melted chocolate
In a electric mixer cream the cream cheese with sugar, then add the milk and melted chocolate then add the chocolate to the cream cheese mixture let it get all creamy.
Cut a piece of cake, spread some icing on, then the some whipped cream and a nice scoop of ice cream on the side (the best part!)

1 teaspoon baking soda
1 cup butter
1 tablespoon unsweetened cocoa
1 teaspoon salt
2 eggs
1/2 cup sugar
1 cup chocolate chips
1/2 cup walnuts
and a few tablespoons of sugar for the top
Grease and flour a 9x13 inch pan. In a mixing bowl or small saucepan, pour the boiling water over the chopped dates. Set aside. Sift together the flour, cocoa, baking soda, and salt.
In a large bowl, cream together the butter and the sugar until light and fluffy. Beat in the eggs, then mix in the flour mixture. Add in the dates with the soaking liquid, and stir until just combined. Pour batter into prepared pan.
In an another bowl, combine the chocolate chips, walnuts, and remaining sugar. Sprinkle mixture over top of cake
